Mushroom and Cashew Stir Fry
Ingredients
- 500 grms Hokkein noodles
- 1 tblsp sesame oil
- 1tblsp extra virgin olive oil
- 3 cloves garlic crushed
- 1 small red chilli very finely sliced
- 6 spring onions sliced
- 1 red capsicum julienned
- 2 cups button mushrooms sliced
- 2 cups broccoli florets
- 1 cup snow peas sliced
- 200 grms baby sweet corn halved
- 2 cups bean sprouts
- 1 ½ cups roasted cashews
- 3 tblsps tamari (soy sauce)
- 2 tsps ginger finely grated
Method
- Soak noodles in boiling water 2 mins, drain and set aside.
- Heat oils in wok or frypan, add garlic, ginger, chilli and spring onions. Fry 2 mins.
- Add capsicum, mushrooms, broccoli, corn and snow peas, cook with a little water until tender over medium/high heat.
- Add tamari, bean sprouts, noodles and cashews.
- Heat through and serve immediately. (Serves 4)
